Chocolate-Pistachio Biscotti


Nothing I made this week turned out successful until this biscotti. Not just in cooking but also at work. Oh god… I’m having bad days! Ok, let’s move on to this wonderful biscotti. This recipe is from Martha Stewart.


These pistachios are roasted, salted and in shells. We got tired of munching them so I used them for this recipe.


Flour, cocoa powder and baking soda mixture.  I skipped the salt since my nuts are salted.




This is my first biscotti and I learned that it’s important to shape the log uniformly and I think I should divide it into 2 logs next time… easier to cut later on.


350°F for 25 minutes.


The nuts made the cutting a little challenge even though I got a sharp bread knife.


After 8 minutes @ 300°F.

They got good chocolate flavor but not too rich that you can eat more than one. I actually like it that they are not too hard, my little kid could eat them too. This recipe is very easy and made me happy that I finally made something right. 🙂
