Grilled Veggie Pizza


Today is Labor Day here in US. We decided to spend it, by just staying at home. I just want to stay inside. I want to take a nap. I don’t want to cook. I’m skipping what we call “learning time” with my son. I don’t have to check the stocks today. It’s a going to be a great day! Yesterday I did mostly the cooking that will last us for few days. My husband was in mood for grilling yesterday so, I decided to make grilled pizza with grilled veggies.


We love eggplants on pizza. There’s something I learned new this time-how to get rid of its bitter taste.  I read everywhere that sprinkling them some salt then let them rest for 30 minutes, will remove their bitterness. I think it did work.


I washed the eggplants after salting them then dry then tossed with olive oil and salt and pepper.

Grilled pizza got a smoky flavor on them that’s missing on an oven. I think grilling gives a better taste to anything!
