I got hooked with sweet potatoes. I cut them into wedges and roast them in the oven. I eat these roasted sweet potatoes for breakfast, snacks and sides. I love them! During the Thanksgiving, I roasted them whole and pureed them for a cake plan that didn’t happen. Since sweet potato cake plan is no longer in season, I thought of mixing these orange goodies on breakfast staples.

One of my new year’s resolutionS (ahem… good luck to me! ), is to incorporate more veggies and fruits in my cooking. The pancakes are yummy. On the recipe, it also comes with a pecan butter recipe if you want to go fancy.

Not a big fan of sweet potatoes (maybe because in my culinary tradition we do not use them) but the pancakes sure looks yummy! 🙂
